I'm in Missouri.  I've made almost a gallon so far in two small batches.  I cook mine very slowly in a roster, and the longer cooking time makes it darker but it doesn't taste stronger to me.

The only batch I’ve cooked was a little strong.  Does anyone have experience using a double boiler type situation?
