Manures are not good for sorghum cane-  they impart a taste from salty to bitter in the syrup.  Manure is also high in chlorine which adversely affects many crops when you are looking for quality, though it tends to increase the quantity.
As far as speeding up the maturity would be concerned-  the nitrogen in the manure would delay maturity.  Less nitrogen tends to hasten maturity.
